This chicken recipe is not difficult to prep ahead of time and it really does mix things up from a typical chicken dinner. You can serve it hot right out of the oven, dice it up and use it in a salad or make your own burrito bowl at home.
6 – Boneless Skinless Chicken Breasts
¼ cup – Lime Juice
2 Tbsp – Olive Oil
2 Tbsp – Cilantro (finely chopped)
2 cloves – Garlic (minced)
1 tsp – Agave
1 tsp – Sea Salt
¼ tsp – Pepper
½ tsp – Chili Flakes (optional)
Step 1 – Place the chicken breast in a bowl. Add the olive oil, lime juice, 1 ½ Tbsp of the cilantro (the rest is for garnish,) garlic, agave, sea salt, and pepper. You may add the chili flakes if you wish for a little heat as well. Cover the bowl and allow the chicken to marinate in the fridge for at least 30 minutes, up to 24 hours.
Step 2 – Preheat oven to 400°F. Place the chicken on a baking sheet, cover with foil and cook for about 25 minutes until the chicken is cooked through. Remove the chicken from the oven and garnish with remaining cilantro.
This chicken recipe is great because you can prep the chicken the night before and when it’s time for dinner all you need to do is bake and that’s it! I would suggest checking the chicken before removing from the oven seeing as most chicken breasts are not the same exact size. Just cut into the thickest part of the breast and make sure it is cooked all the way through and that juices run clear before serving. You can serve over a bed of rice or sauté some of your favorite vegetables and serve (as shown in picture above.) I have also found this chicken recipe to be ideal for someone looking to mix up their meal prep for the week ahead.
